The Structure of Proteins
Our helical structures for the polypeptide chain explain some facts about digestion. α-keratin and many native proteins are resistant to digestion by enzymes, in comparison with the denatured proteins. The decomposition by a proteolytic enzyme presumably involves the direct attack on the peptide bond. In our helical structures the peptide bonds are protected by an outer layer of side chains.
